Valery has done it again. These chickpea pancake wraps are filled with golden chicken, avocado and plenty of crisp vegetables, with herbs, chilli and red onion for anyone who likes a little extra. Prepare the different components ahead, let everyone build their own and suddenly lunch feels much more exciting. Slightly messy hands are part of the experience.

Our amazing recipe developer Valery Smink has created these chia waffles for breakfast, lunchboxes and those moments when only a waffle will do. They’re naturally sweet from ripe bananas, easy to prepare ahead and delicious reheated in the toaster for crisp edges. Add a little vanilla, experiment with different spices or serve them with fresh fruit.
